Apple Crumb Cake w/ Bourbon Vanilla Glaze

This Apple Crumb Cake is the perfect fall baked good that can serve as breakfast or dessert, because who doesn’t love cake, apples, and warm spices in the fall.  It has the warmth of a breakfast cake with the sweetness of a dessert, you can eat it any time of day!!
If you can’t tell from my blog, I tend to focus more on cooking than baking.  Generally, I find that baking requires a lot more precision and makes experimenting a bit more difficult.  That is where this recipe comes in, I can really adjust the spice mix and place around with the apple preparation to give it a new twist.  Being able to experiment with how the spices are used really allows me to combine some of what I love about cooking with baking.
The other thing I love about this?  The Bourbon-Vanilla glaze that I drizzle over it!!!  It’s a perfect compliment to the spices in the cake and just adds that little bit of boozy fun.

  • 4 Tbs Butter
  • 1/2 Cup Granulated Sugar
  • 1 Large Egg mixed
  • 1 Tsp  Vanilla Extract
  • 1/4 Tsp Cinnamon
  • 1/4 Tsp Freshly Grated Nutmeg
  • 1/2 Cup Sour Cream
  • 1 Cup All Purpose Flour
  • 1/4 Tsp Baking Soda
  • 1/4 Tsp  Salt
  • 1/2 Tsp  Baking Powder


  • 2 Honeycrisp Apples Diced
  • 1/2 Tsp Granulated Sugar
  • 1/2 Tsp Cinnamon


  • 1 1/2 Cup All Purpose Flour
  • 1/2 Cup Brown Sugar
  • 1/4 Cup  Granulated Sugar
  • 1/2 Tsp Salt
  • 1 Tsp Cinnamon
  • 1/4 Tsp Freshly Grated Nutmeg
  • 6 Tbs Butter melted
  • 1/2 Tsp  Vanilla Extract


  • 1/3 Cup Powdered Sugar
  • 1 Vanilla Bean Seeded
  • 2 Oz Bourbon
  • 2 oz Water


  • Preheat the oven to 350 F.
  • Spread butter on the inside of a springform pan or baking pan.

Crumb Topping

  • To make Crumb in a bowl, whisk together dry ingredient, add melted butter and vanilla and stir until the entire mixture forms clumps of various sizes.


  • Coat the apples in the sugar and spices and mix well.


  • In a large bowl or stand mixer, beat the butter with the sugar until light and fluffy, while continuing to beat add the egg, vanilla, and sour cream (in that order).
  • In another bowl, mix the flour, baking soda, salt, baking powder, and spices.  Add the dry ingredients to the butter mixture and mix until the batter is formed.

Constructing the Cake

  • Spread the batter on the bottom of the pan.  Lay the apples in a single layer over the batter.  Coat the entire cake with the crumb topping.
  • Bake 45-50 minutes or a stick in the center comes out without dough.  Allow to cool before glazing.


  • To make the glaze whisk all of the ingredients together until a slightly thick icing is formed.  Add more sugar or water as needed to reach the desired consistency.  Drizzle the glaze over the top of the cake.
