    I feel like I am finally starting to get into baking. For a long time I didn’t really feel like it allowed me to explore variety or experiments.     This pound cake is my take on a family recipe that is a dessert staple for parties. It also is another one of those family recipes that Rob seems to love.     Cheesecake was the only request Rob’s sister had when her and her fiance over for dinner before they move cross country.     I think that cheesecake is the perfect dessert for me. Its sweet but not over the top. My favorite cheesecake growing up was one with chocolate and vanilla from Cheesecake Factory. Thankfully for me, Rob has a huge sweet tooth and loves chocolate mousse and cheesecake. So, he was all for this mash-up. I decided to combine a layer of classic vanilla bean cheesecake with a bittersweet chocolate ganache mousse layer. This gives it a combination of both worlds: the soft creaminess of the mousse on top and the firmer richer cheesecake.     I don’t know why I waited so long to make something like a Chocolate Mousse Cake. Rob will eat just about anything chocolate and I love a light fluffy mousse.     I haven’t really baked anything since the holidays and felt the need to get back into it. Since we had a long weekend, I decided to make another cheesecake. This time, I wanted to incorporate a fruit swirl. Raspberry is one of my favorite fruit flavors for dessert. It’s got a great tartness that pairs well with almost anything. Our wedding cake was actually part raspberry flavored. It was raspberry preserve and lemon curd in the layers. Rob actually picked the flavor combo to account for both of our tastes.
