Grilled Street Corn

Street Corn is a fairly new trend that I just love.  The use of compound butter to give corn a lot more flavor in simple ways is what makes it so great!  I’ve seen Street Corn in so many forms from classic Mexican to Mediterranean.

Corn is the ultimate summer food to me.  It brings me back to summer vacations spent at the Jersey Shore.  I cannot even begin to think of the number of ears of corn I ate as a kid every summer at back yard cookouts.  It was always the kids’ job to remove the corn husks so before every cookout; so my siblings and I would sit on the deck and shuck the ears of corn in the evening.  While this corn is prepared differently than I had it as a kid, it still provides the simple summer joy of biting into an ear of corn.

Corn is a great way to get kids involved with cooking.  Shucking corn is easy, fun, and (best of all) safe!  It’s nice to sit out on your deck or patio and make a game of it!!

Grilled Street Corn

  • 4 medium ears sweet corn husks removed
  • 1/4 cup Cotija cheese

Cilantro Lime Butter

  • 4 tbsp Butter softened
  • 1 lime zested and juiced
  • 1/8 tsp red pepper flake
  • 1 tbsp chopped Cilantro
  • salt and pepper to taste


Cilantro Lime Butter

  • Mix ingredients in a small bowl with a fork. Set Aside


  • Cut cobs in half and pierce through the core with a skewer. Grill corn on a grill pan or grill until corn starts to blacken, about 5 minutes per side (sometimes longer on a grill pan). Remove corn from grill, allow to cool for a few minutes. Top with butter and cotija cheese.
