Simple Drop Biscuits

Biscuits are one of my favorite foods but I have no patience to roll out dough, so drop biscuits are basically heaven for me.  They have all the taste of standard biscuits but none of the hard work.  They are super easy to whip together even for a last minute brunch especially because the food processor does most of the work.

  • 2 cups all purpose flour
  • 1 stick of butter very cold and cubed ( i use KerryGold Butter)
  • 1 tbsp baking powder
  • 1 tsp salt (if using unsalted butter
  • 1 cup buttermilk


  • Preheat oven to 400.
  • In a food processor, add flour and baking powder. Pulse a few times to combine. Add butter and pulse until mixtures form pea size clumps. Add buttermilk and pulse until moist and combined.
  • Using an ice cream scope, measure out about 6 large or 12 medium size mounds on a baking sheet. Bake 20 minutes, or until golden.
