    Drop Biscuits

Drop Biscuits are not a new recipe for me; however, I took advantage of the long weekend to make breakfast and try a few new things. The last time I made drop biscuits they ended up coming out pretty dense and dry. It was almost like a scone, which is not at all what I wanted. So let the research begin. I prefer drop biscuits to traditional biscuits really because of the simplicity. Having to do a bunch of rolling and needing to get the layers needed to make a traditional flaky biscuit is too much. The drop biscuit eliminated most of the work. The last time I made drop…

    Chocolate Chip-Macadamia Nut Brownies

I feel like I am finally starting to get into baking. For a long time I didn’t really feel like it allowed me to explore variety or experiments. This is one of my favorite things about other kinds of cooking; that freedom to just kind of wing it and throw flavors together. Baking always felt a little too regimented. You need to use precise proportions to make sure you get the consistency just so and things like that. I typically found this intimidating and to be honest a little boring. What I am finding now is that, baking is really about mastering a core set of proportions for certain ingredients…

    Lemon-Vanilla Cookies

So Rob decided he wanted to do some baking this weekend. One of his coworkers had been asking him to bring in some cookies like his chocolate-ginger ones, so he set off to do just that. And just to be clear, this was all him, I left him to his own devices in the kitchen (which almost turned out badly when he almost forgot to add the eggs to the dough). Rob was aiming for something like the crinkle cookies, but that isn’t quite what he got in the end. They didn’t really get that crinkly look but more the look of like a drop cookie. This may be on…

    Classic Brownies

I had a big meeting at work and wanted to get good participation. So, I promised baked goods because that was sure to get my co-workers excited. To decide what to bring, I bounced ideas of Rob since he likes most baked goods. My first thought was cupcakes, but we realized they would be far more work and harder for me to take to work on the Metro. Rob then gave me the idea of brownies. Brownies are one of Rob’s favorite desserts, then again just about anything with chocolate is his favorite. He loves the classic brownies from the boxed mix, so I set out to make something like…

    Raspberry Swirl Cheesecake

I haven’t really baked anything since the holidays and felt the need to get back into it. Since we had a long weekend, I decided to make another cheesecake. This time, I wanted to incorporate a fruit swirl. Raspberry is one of my favorite fruit flavors for dessert. It’s got a great tartness that pairs well with almost anything. Our wedding cake was actually part raspberry flavored. It was raspberry preserve and lemon curd in the layers. Rob actually picked the flavor combo to account for both of our tastes. Rob liked the sweet citrus curd and I liked the tart fruit. I highly recommend this combo for a dessert.…

    Orange Spritz Cookies

This week has been big for us and baking!!  Today, I had a day off and wanted to make a classic.  To me, Christmastime means one thing: SPRITZ COOKIES!!!  They are simple and small but they are easily the most recognizable of seasonal cookies.  My husband’s family made them, my family made them, and my guess is a lot of your families made them too. This year I decided I wanted to mix the spritz cookies up and used orange zest instead of vanilla to flavor them.  It added a unique flavor and it gives the cookies a slight pop of color too.  I decided to go relatively simple with…

    Chocolate-Ginger Crinkle Cookies

Needless to say we have gotten past our fear of baking!  My husband saw a lot of crinkle cookies on social media and decided we should make some.  Rob has a huge sweet tooth, so all the cookies caught his eye.  Since he had a day off, we decided to make some. I can definitively say that Rob really likes ginger cookies and chocolate.  So he took the initiative and decided to combine the two into his own creation with this one.  These crinkle cookies came out perfectly soft and chewy, with a slightly sweet flavor and a hint of that ginger spice!  While Rob normally doesn’t like to cook,…

    Vanilla Bean Cheesecake

As I have previously said, baking is not my primary focus area, but this holiday season I have chosen to really expand my horizons and fill out my skill set.  Thus enters a first for me:  Cheesecake!!  My husband was so excited for this as a good classic cheesecake is one of his favorite desserts.  I decided to change it up a bit by using a chocolate cookie (Oreos) for the crust as opposed to the standard graham cracker.   I will also admit that this exact recipe was a bit of an accident.  While in the process of making the filling, I added the vanilla bean because we ran…

Apple Crumb Cake w/ Bourbon Vanilla Glaze

This Apple Crumb Cake is the perfect fall baked good that can serve as breakfast or dessert, because who doesn’t love cake, apples, and warm spices in the fall.  It has the warmth of a breakfast cake with the sweetness of a dessert, you can eat it any time of day!!   If you can’t tell from my blog, I tend to focus more on cooking than baking.  Generally, I find that baking requires a lot more precision and makes experimenting a bit more difficult.  That is where this recipe comes in, I can really adjust the spice mix and place around with the apple preparation to give it a…
