    Beer-Battered Fried Fish Tacos

Maybe its the Irish girl in me or just that frying makes a lot of things pretty awesome. Either way, Fried Fish Tacos are pretty great. My first exposure to good fish tacos wash a few years ago when we went to San Diego. We went to this taco place in La Jolla called Puesto. They served a wide variety of smaller tacos but they all came on freshly made blue corn tortillas. Ultimately, these tacos draw inspiration from those tacos. I decided to go for beer battered cod (might not be Guinness, but still a good Irish tradition). We used a hazy IPA since it brings a good effervescence…

    Instant Pot Tri Tip Tacos

I finally have another Taco Tuesday post for you all!! This time its a super easy tri tip taco made easy with the Instant Pot. It’s got loads of flavor, is super tender, and requires minimal effort. Rob and I made one of our not so common trips to Trader Joe’s recently. I love Trader Joe’s, you can find some great stuff for pretty cheap, its just not a particularly convenient location for us so our trips are somewhat more sporadic. On this particular trip, we spotted some vacuum sealed tri tip roast and decided to give it a try. Tri Tip comes from the sirloin of a cow and…

    IPA-Braised Chicken Thighs

Braising chicken thighs is one of my favorite cooking methods.  It only takes about an hour in the oven, but can provide a real depth of flavor that you just can’t get from other methods. The nice thing about this cooking technique is that it really works with such a wide variety of culinary styles. Traditionally, I tend to use classic flavors like garlic, wine, mustard, etc. While this is great, it can sometimes feel uninteresting. For this recipe, I set out to make something a bit unique. I really wanted a light combination of flavors that felt bright and good for the warm weather. The answer was a few…

    Irish Stew and Dumplings

If you can’t tell by looking at my picture, my family background is Irish. Unfortunately, the Irish have historically not be known for culinary mastery. I think that is a shame; meat and potatoes may not be the fanciest thing on the planet, but they can be so delicious. With is being St. Patrick’s Day, that means a nice bowl of stew to me. I could have gone with corned beef, the other Irish classic; however, I generally prefer stew. I went with a pretty classic Guinness-based Beef Stew. Neither Rob or I are particularly big fans of Guinness (or stouts in general) as a beer to drink. That said…

    Slow Cooker Carnitas Tacos

Slow cooker recipes are great for busy days.  The slow cooker does everything and you don’t need to stay in the house all day.  These Carnitas Tacos are perfect for a weeknight dinner since you don’t really have to do much.  On the other had, they are also great for entertaining since it makes a lot.  Throw this recipe together in the morning and serve with all the taco fixings buffet style.  The results? No stress entertaining!  What makes this even better is there is little to no prep work involved, all you need to do is half or quarter the fruits and veggies and toss them in the slow cooker and…
