    The idea to make something with rabbit was all Rob, as was the cooking. His love of a gamey meat sauce over pasta definitely highlights the Italian in him. Whether it was a Stoffer’s frozen version, a local favorite, Costco, or homemade, most kids probably had some version. A traditional casserole style is great because it feeds a crowd and you can even make it ahead as a freezer meal.     Homemade Gnocchi with Bolognese

    Making Gnocchi was pretty intimidating, almost more than pasta. Part of the problem with it is that you effectively need to start by making mashed potatoes. Once you get through all of that its actually pretty straight forward just a bit labor intensive. Now that we have done it once, it will go a lot smoother and I may even consider some tools to make the process easier. I used my Instant Pot to cook the potatoes since it was pretty straight forward to steam them that way. Steaming has become my default potato cooking method if they aren’t roasted/baked.     This Easy Sausage Bolognese is a one of my favorite weeknight go-to meals.  Its hearty, flavorful, and can be thrown together in about 30 minutes.  I have made many different versions of this to vary up the flavors but this is the one I have settled on as my favorite.  Its a little spicy and perfectly creamy.
