    I love an easy Pasta Bake. They aren’t fancy or complicated, but they can taste really good.     Taco Tuesday: Chorizo Burrito Lasagna

    This Burrito “Lasagna” recipe was definitely a little bit of an experiment. By “little bit”, I guess I really mean a lot. Rob and I were just spit balling ideas for how could we make something like tacos or enchiladas a bit different. It is amazing what you can come up with when you have these kind of experimentation brainstorms. We started with well maybe we add some rice to enchiladas and make them more like baked burritos.     Cauliflower Mac & Cheese

    I wish I hadn’t taken so long to get into the cauliflower thing, its quickly become one of my favorite veggies. I love how it roasts to a perfect crispness, which makes it perfect to add some texture to Mac and Cheese. It also helps round out the dish a bit, definitely doesn’t make it “healthy” but adds a little more overall nutrition. I decided to make this Mac and Cheese with a “three nation” cheese blend.     Skillet Baked Ziti

    Rob and I came up with this Baked Ziti recipe to give us an easy post-travel dinner. I wanted to get the general feel of baked ziti without the need for a separate casserole dish and an egg-based cheese mix. It worked out perfectly when we gave it an inaugural run, when Rob came home from a full week of work travel. The main benefit of this recipe is next to no real prep work.     Pastitsio is one of Rob’s all-time favorite recipes. It is essentially a Greek lasagna/baked ziti dish. Pastitsio is a layer of pasta topped with a spiced meat layer followed by a bechamel layer. It is definitely a bit labor intensive but it is so delicious. I definitely see why Rob loves it so much. I love this too as it makes for a good make-ahead or leftovers dinner.
