    Summery Bolognese 3.0

As this is now my third version (Versions 1 and 2 are available HERE and HERE) of what might as well be a series on Bolognese, it should be clear that I love a good pasta sauce. I mean really whats not to love about a flavorful bolognese and pasta when you want an easy, low fuss dinner. As a result, I have made many varieties over the years to suite almost any situations. This particular version was born out of a desire to use ingredients we had on hand from a variety of store runs before they went bad. So we had a bunch of ground meats, some stuffed…

    Creamy Sun-Dried Tomato Pasta

This is another recipe that is loosely inspired by an Ina Garten one. I love a good pasta; unfortunately, tomato sauces are a little harder to innovate. This one started out as her sausage and fennel pasta, but we modified it along the way with some different flavors. Rob and I really liked the idea of a creamy tomato sauce like Ina’s recipe. To mix it up we added a little shallot with the fennel. The bigger add for us was some sun-dried tomato. He was looking for a new flavor profile and preparation to try out since he knows that I do actually like Branzino. I actually ordered it once when we were in New York and I loved it, so Rob has been wanting to make it again for me. For this roasted recipe, he was looking to mix things up with a French flavor profile. He had done a pretty standard Mediterranean-style before; plus with Branzino being a very Italian fish, he wanted to make it different. When he texted me with how he was…

    Roasted Red Snapper

I did not grow up eating fish and, to be honest, I am still working on learning to like it. One of my goals for 2019 is to really expand on this and make it a more regular part of our meals. I am starting to learn what I do and do not like about fish. That said, I still find it intimidating. Thankfully, Rob is here to help push me further and he helped me develop the recipe for this one. Rob decided to go for a classic Mediterranean style roast. He used classic elements like lemon, fennel, and dill. Overall the prep was super easy. We just had…
