    Seared Moroccan Swordfish

Rob finally got to make swordfish for me!!! Rob went with a new preparation on this version similar to how he likes to cook a steak in a skillet. Turns out it works just as well for fish as it does red meat. I have to say I really like this cooking method. A fish with a nice crispy crust on the outside is easily my favorite. Texture is definitely my biggest problem with fish and a good sear definitely does the trick. While a grill or grill pan provide nice grill marks, I often find that the consist color of a skillet more appealing. As for the culinary style,…

    Provencal Roast Branzino

This Roast Branzino was Rob’s other fish experiment when I was on work travel last week. He was looking for a new flavor profile and preparation to try out since he knows that I do actually like Branzino. I actually ordered it once when we were in New York and I loved it, so Rob has been wanting to make it again for me. For this roasted recipe, he was looking to mix things up with a French flavor profile. He had done a pretty standard Mediterranean-style before; plus with Branzino being a very Italian fish, he wanted to make it different. When he texted me with how he was…

    Grilled Swordfish with Thai Glaze

The credit for this goes entirely to Rob. I had to go on a work trip for a few nights leaving him to fend for himself dinner-wise. He will admit that normally he just gets kind of lazy and will pick up something easy. This time though he decided to experiment with some fish dishes in my absence. The first was a Grilled Swordfish steak with a Thai-style glaze. His focus for this one was getting the grill timing down and for developing flavor. He picked swordfish for one of the experiments since he figures its something I will like because of the firmer texture. Based on his texts when…

    Seared Blue Fish Tacos

Well, if you are Catholic, its Lent and you know what that means: no-meat Fridays!!! (There is a hilarious joke in 30 Rock about this being because the Pope owns Long John Silvers) So that basically means cheese pizza or fish. Growing up, my mom HATED fish with a passion; so it was mostly the pizza option. Rob grew up eating fish and is helping me get used to it. I think I am really starting to work out the kinds of fish and preparations that I like. I definitely prefer a firmer fish texture and I like it with a good crust to provide a nice textural contrast. I’ve…

    Taco Tuesday: Glazed Salmon Tacos

For this addition of Taco Tuesday, I am bringing my first set of fish tacos!! While I am not a huge fan of salmon, I loved the flavor of these Glazed Salmon Tacos. The glaze is a spicy-sweet mixture that really helps to offset the fishiness of the salmon. Fish tacos can really add an interesting dimension to tacos mainly because of the texture. A flaky fish like salmon makes for a nice light taco that can be perfect in the summer months. On the other side of the spectrum are fried fish tacos. These are great as they add a really nice crunchy textural element to the taco which…

    Roasted Red Snapper

I did not grow up eating fish and, to be honest, I am still working on learning to like it. One of my goals for 2019 is to really expand on this and make it a more regular part of our meals. I am starting to learn what I do and do not like about fish. That said, I still find it intimidating. Thankfully, Rob is here to help push me further and he helped me develop the recipe for this one. Rob decided to go for a classic Mediterranean style roast. He used classic elements like lemon, fennel, and dill. Overall the prep was super easy. We just had…
