    Picnic Pasta Salad

    This recipe is probably at the top of the list of favorite recipes for me and Rob. Its got good flavor, is light, and best of all packs well! That last one is really important because, for years now, this has been our go to picnic food.     Zakarian’s Yogurt and Herb Pasta

    So, this may be the first time I got a real inspiration from watching the Kitchen on the Food Network. The best part of the show though is definitely Geoffrey Zakarian (just gonna call him GZ going forward). When he makes something on the show, its more often than involves proper technique and flavor pairings. This one actually caught my eye and made me go oooh!     My husband’s family is of Greek decent, so he loves to experiment and make Greek dishes like Tzatziki.  Many of them are fairly simple (like this one), while others can be extremely complex (like pastitsio or spanikopita).  For Tzatziki, all you really need is garlic, cucumber, greek yogurt, lemon, and dill.  I always go with the fat free yogurt since it makes this a super healthy dip option.  The only prep work needed is to really mince the garlic and cucumber.  You can leave the cucumber a bit chunkier, but I prefer it a bit smoother.     Pastitsio is one of Rob’s all-time favorite recipes. It is essentially a Greek lasagna/baked ziti dish. Pastitsio is a layer of pasta topped with a spiced meat layer followed by a bechamel layer. It is definitely a bit labor intensive but it is so delicious. I definitely see why Rob loves it so much. I love this too as it makes for a good make-ahead or leftovers dinner. We did break from tradition a little bit with this version. For this version, we used a ground beef and veal combo instead of traditional lamb.     Chicken Souvlaki Rice Plate

    Chicken Souvlaki is one of Rob’s favorite lunch options. Rob is of Greek decent so souvlaki is something he grew up eating and has a simple, healthy recipe for making it. This is a make-at-home version of the rice plates that you can get at many of the quick service restaurants that have popped up recently. These also make for a great get together meal since they are DIY! We made this rice plate with a cucumber-radicchio slaw and tzatziki.
