    Jalapeno-Lime Shrimp Skewers

Shrimp are probably one of the ingredients that I am most iffy on (I have only tried them once or twice). Maybe it was too many times growing up having over-cooked shrimp. I’m sure you know what I am talking about, those chewy/rubbery examples that don’t taste like anything. Plus, I wasn’t a fan of seafood in general until relatively recently. The key for shrimp for me is a good flavor and the perfect cooking. So some grilled shrimp skewers were a little new for me! One thing I will recommend: if you can just buy the peeled and deveined shrimp. We bought some really good looking shell on shrimp…

    Tequila-Lime Chicken Nachos

I love nachos!! I’m not sure if its the finger food aspect or what, but there are times I like them more than tacos. This version is a ground chicken version using one of my favorite flavor combos for Mexican food: tequila and lime!!! Rob and I have been making something along these lines for a while, but haven’t really ever made them pretty like this. Historically, we just used those store-bought taco seasoning packs. Whether we were calling them “Shrampis” or joking about white chocolate sauce on them, we were laughing almost the whole time. I have recently started liking shrimp and I still don’t always like it. I really like them grilled or seared with a sauce. While eating out, I recently had a Korean shrimp taco that was awesome and that is what sort of inspired me to make these. I did stick to a more traditional flavor profile for this one with a lime-jalapeno marinade to start. To note, I didn’t let it…

    Peach-Jalapeno Pork Tenderloin

Pork Tenderloin can be a little intimidating. This recipe was actually one of the first original recipe experiments I made when trying to restart my blog almost a year ago. It is a very spring/summer recipe so I haven’t posted it to the blog yet. This is a great prep ahead dinner, you can let it marinade for a while and the flavor only gets better. You could make the marinade the night before and then just pull it out to cook or do it in the morning. Either way it accomplishes the goal and all you have to do is stick it on a baking sheet. Pork tenderloin is…
