    Moroccan Roast Chicken Thighs

Roasted chicken thighs are probably one of my favorite recipes. The reason I love them is just how versatile the concept is. If you can master the technique you can literally do almost any flavor style you can imagine. My recommendation is start French (like these) and then experiment from there. This time around I decided to take this in the direction of Moroccan. Rob actually suggested the concept based on a dish I had last time we were in Sonoma. We went to Glen Ellen Star, which is an awesome little restaurant in Glen Ellen (shocking, I know) that is one of our all-time favorites. Anyway, I had ordered…

    Roasted Chipotle Chickpeas

Today is the start of March Madness. For me, its a time for snacking and watching games. Sometimes those games lead to stress which leads to more snacking. That means I need a snack I can just keep munching on that is healthy and flavorful. Roasted Chickpeas are the ultimate healthy snack that you can munch on all day. Personally, I love a flavorful snack that isn’t sweet. Roasted Chickpeas make a really great canvas for flavor since on their own they are pretty bland. I have made them in a variety of styles in the past. You can go pretty basic or really experiment. My first batch years ago…

Pastitsio is one of Rob’s all-time favorite recipes. It is essentially a Greek lasagna/baked ziti dish. Pastitsio is a layer of pasta topped with a spiced meat layer followed by a bechamel layer. It is definitely a bit labor intensive but it is so delicious. I definitely see why Rob loves it so much. I love this too as it makes for a good make-ahead or leftovers dinner. We did break from tradition a little bit with this version. For this version, we used a ground beef and veal combo instead of traditional lamb. We made it with lamb once; however, lamb has a very strong flavor and competes a…

    Roasted Red Snapper

I did not grow up eating fish and, to be honest, I am still working on learning to like it. One of my goals for 2019 is to really expand on this and make it a more regular part of our meals. I am starting to learn what I do and do not like about fish. That said, I still find it intimidating. Thankfully, Rob is here to help push me further and he helped me develop the recipe for this one. Rob decided to go for a classic Mediterranean style roast. He used classic elements like lemon, fennel, and dill. Overall the prep was super easy. We just had…
