    Apple-Mustard Roast Chicken Thighs

I love roast chicken thighs. They are one of the first recipes I started cooking when I really got into it. That said, being one of my oldest recipes it can sometimes feel a little stale. Thankfully, Instagram actually helped me get some inspiration. I saw this post from Stephanie at Girl with the Iron Cast and wanted to try something like it. So, thanks so much for the inspo!! I liked the lemon and asparagus idea and combined that with my apple and mustard. For a while I was using mustard all of the time, but recently I had stopped. Rob was bugging me to use it so more…

    Ina Garten Chicken Mash-up

Let’s be honest, who doesn’t love Ina Garten’s chicken recipes? She has so many and they are all amazing. They have also served as such an inspiration for me and I have made so many personal variations. There is a reason she is so well know for these recipes. My favorite is easily here skillet roast spatchcock chicken (just search my recipes I have 2-3 on here). I love this cooking method, it is fast and fun to do. You can really have a lot of fun with the ingredients and make so many unique flavors. This time around I wanted something a little crispy. Ina provided the answer with…

    Lemon-Mustard Pork Chops

For whatever reason, I don’t cook pork chops very often. Maybe it’s that growing up, they tended to either be super bland and dry or they were breaded and baked (Shake-n-Bake being the classic). Honestly, that doesn’t necessarily make you want to eat it. I will say that there are good ways to prepare things reminiscent of those childhood versions. Take schnitzel, its awesome! Roasting though has its challenges, I have really had to look at the technique and flavors for cooking pork. For this recipe, I wanted to go with a pretty classic French flavor. Dijon (my favorite ingredient) served as the base. To that I added shallot, tarragon,…

    Dijon-Crusted Rack of Lamb

So, I will start by saying that this Dijon-Crusted Rack of Lamb was largely Rob’s creation; he even did the cooking. Its always nice when I can take a night off and let him do the work, it makes for a very romantic date night. In fact, many of our big weekend date night-in meals are his creations. There isn’t much better than a husband who can prepare a nice dinner is there? This kind of recipe is really Rob’s bread and butter though. Its overall very simple to make but really deep in flavor and textural elements. Rob definitely tends to stay away from complex techniques but roasting meat…

    Dijon-Tarragon Roast Chicken Platter

If there is anything I have in common with Ina Garten, its a love for roast chicken. It’s easy, tasty, and allows for near infinite variation. As a side benefit, roast chicken can be an easy weeknight meal for the family or romantic date night special. Normally, I do a pretty basic butter-herb mixture to spread over the chicken, but I wanted to mix that up a bit for this meal. I also was looking to have a complete meal where the core flavors were tied into all of the dishes. So, I ended up with a Dijon-Tarragon Roast Chicken along side Tarragon Mashed Potatoes and Charred Brussels Sprouts in…

    Apple-Mustard Braised Chicken Thighs

Braised chicken thighs are easily one of my favorite dishes and techniques (I have made multiple version include this IPA version).  You can do so much with the basic methodology and really make this your own.  What I love about these particular flavors is that this dish feels warm and hearty, while still being pretty light and generally healthy for you. The other great thing about chicken thighs is that they makes for a great weeknight meal.  You can set it on and forget it and work on other things or make some great sides.  As the overall prep work required tends to be pretty low, the overall effort and…
