    Creamy Sun-Dried Tomato Pasta

This is another recipe that is loosely inspired by an Ina Garten one. I love a good pasta; unfortunately, tomato sauces are a little harder to innovate. This one started out as her sausage and fennel pasta, but we modified it along the way with some different flavors. Rob and I really liked the idea of a creamy tomato sauce like Ina’s recipe. To mix it up we added a little shallot with the fennel. The bigger add for us was some sun-dried tomato. I really love them as an ingredient; they have a bit of saltiness and are better than regular tomatoes in my opinion. This is one of…

    Creamy Tomato Pasta

This Creamy Tomato Pasta is one of those recipes that is extremely easy, but really flavorful. I love making these kinds of pastas. Don’t get me wrong, I love a big pasta dish or a slow cooked meat sauce, but more often than not, all I really want is something simple like this. The sauce for this pasta is a tomato-infused cream sauce. I didn’t really want to make this very complicated and instead focused on simplicity. This sauce only has about 5 ingredients plus the chicken, pasta, and spinach. I love that because its easy but takes not effort or prep. I am really also starting to enjoy using…

Sun-Dried Tomato and Roasted Cauliflower Carbonara

When Rob and I were making this Sun-Dried Tomato Carbonara, I commented to Rob how much I love our weeknight experimental pasta dishes. For a long time, we had a 3-4 pasta dish rotation that we would go through. While all of those recipes are good (and on the blog here and here!), the blog has really pushed us to create new recipes and look for variations. So, along came this dish! I am not sure that this is a true “carbonara”, but its pretty close. It’s a cream sauce with pancetta, wine, and garlic. For a bit of color and flavor, I added sun-dried tomatoes which really complimented the…

    California Club Sandwich

Who doesn’t love a good classic club sandwich?  While not the most exciting culinary topic, a good sandwich is sometimes just what is needed and you can do so much with a sandwiches.  Personally, Clubs are my favorite sandwich, they are easy and simply flavored.  That simple flavor is why they are so much fun, it makes them great for experimenting.  Want to make them more fun?  Make it a California Club Sandwich!  I had some extra avocado and this sandwich just called to me. This time, I decided to create a bit of new flavor as well with some sun-dried tomatoes.  To give the sandwich that flavor, I created…
